The point of using Lorem Ipsum is that it has a more-or-less normal distribution of letters, as opposed to using 'Content here, content here', making it look like readable English. Many desktop publishing packages and web page editors now use Lorem Ipsum as their default model text, and a search for 'lorem ipsum' will uncover many web sites still in their infancy. Various versions have evolved over the years, sometimes by accident, sometimes on purpose (injected humour and the like).

NEW BEAUTY LAUNCH : SWEET INSPIRATIONS


It’s always hard to keep completely schtum whilst working on an exciting launch, especially when things like this take almost a year from start to shelves. I’m super excited to share with you the Sweet Inspirations range, comprising of 8 products smelling of sweet macarons and housed in beautiful pastel french patisserie style packaging. I am obsessed with this scent and whole range and from the 27th May you can order online at Feelunique and Superdrug and as of the 6th June, it will be in Superdrug stores across the UK *excited squeal*. 3 TIER SPICED CARROT & WALNUT CAKE



Preheat oven to 170oC / Gas 4 and line your baking tins with greaseproof paper. Add the sugar, oil and eggs into a large mixing bowl or your electric mixer.
When lightly mixed, add the carrot, raisins, grated orange, pumpkin seeds and a handful of walnuts.
Next mix the flour, bicarbonate of soda and spices and sieve into the bowl. When everything has come together nicely, stop mixing. It's best to put your mixture into a jug and pour it into the baking tins before putting them in the oven for 40-45 minutes, or until a skewer comes out clean.
Once your cakes are cooling on wire racks, it's time to make the butter icing! Mix the butter on it's own for five minutes until it is lighter in colour and very creamy in texture. Gradually add the icing sugar until it has all combined.
Add the milk and the orange zest and beat for a further couple of minutes. Once cakes are completely cooled, level off the layers by removing any peaks in the cake. This makes the cake a lot more level and visually a little more pleasing. You can use a large sharp knife for this or a cake leveller is super easy too, obviously be careful doing this though, there are no fingers in this recipe.
Spoon the icing into a large disposable piping bag and using a large star nozzle, pipe around the bottom layer in a circle and fill into the middle. Place middle cake layer on top and repeat this process.
After placing the top layer of cake down, start piping stars around the outside by squeezing vertically with your piping bag and lifting up into a point. Place walnuts on alternate icing stars and dust with icing! Voila.

Drink Up my hydration level


If you measured my hydration level, I’m pretty sure most of the time I’d be on the raisin scale and that applies to both my skin and the amount of water I drink. From an early age we’re told to try and drink up to 8 glasses (or 2 litres) of water a day and for as long as I can remember I’ve always struggled with this. It’s not that I find drinking water boring, it’s just that I don’t ever really get that major thirsty feeling and I’m always so busy I forget to sip (and sipping is key people). I have a number of different methods I like to use to try and encourage me to drink more water throughout the day, including apps and special bottles with time targets. Personally, I love drinking water, but you’d be amazed by the amount of people who just can’t stand the taste or say it’s boring and have to add a dash of squash or cordial to make it more bearable. Thanks to Pinterest, fruit infused water has become a summer staple and I wanted to share with you a few of my favourite fruity concoctions. Not only do they add flavour to your water, but they also all have their own benefits for your health by boosting your water with natural antioxidants. Throw in some ice and a couple of pretty straws and you’re good to go! Water has never looked or tasted so pretty and it takes no time at all.

Strawberry and Basil – This is my favourite surprisingly. You wouldn’t necessarily think basil will taste nice in water, but it actually does. It’s light, refreshing and has a lovely sweet taste from the strawberries.

Lemon, Blackberry & Rosemary – A little more on the bitter side but still delicious and the rosemary gives it that slightly more fragranced taste.

Raspberry and Mint – Another favourite of mine! Anything with mint in it will always be a winner as it’s just so fresh and summery.

Orange, Lemon & Lime – This is probably the most popular among fruit water lovers as it’s packed with citrus slices and is very refreshing.

Lime and Blueberry – The lime and blueberries together form a lovely zingy taste!

APPLE CRUMBLE CUPCAKES


Add the flour, baking powder, cinnamon and salt and gently mix until combined.

Carefully fold in the apple mix.

Spoon the mixture into a lined cupcake tin.

Bake for 15-20 minutes until golden brown.








Next make the crumble topping!


In a large bowl, rub together the butter, flour, cinnamon and vanilla until nice and crumbly, and then stir in the sugar.

Spread the crumble mix onto a lined baking tray and bake for 5-10 minutes until just golden.








For the icing:


Beat together the butter and brown sugar with the cinnamon and vanilla extract, for 5-7 minutes until fully combined and light and fluffy.

Add the icing sugar a little bit at a time and continue to beat on a low speed.

Add the milk a tablespoon at a time until the icing is light and creamy but stiff enough to hold it’s shape.








Building the cupcakes:


Once the cupcakes and crumble are fully cooled, spoon the icing into a piping bag fitted with a star nozzle.

Spread a small amount of icing on the top of each cupcake, and add the crumble mixture.

Using the piping bag, pipe a small swirl of icing onto the top of the crumble on each cupcake. Top with a small sprinkle of crumble, and enjoy!

WHO RUN THE WORLD?




GIRLS.

It’s International Women’s Day, which presents the perfect opportunity to reflect on and celebrate the women who have a positive impact on my life and inspire me each and every day. In a generation where more and more women are absolutely bossing it and choosing not to follow society’s rules, break out of the mould and make career and life choices for themselves and nobody else, there can be a fair amount of girl-on-girl crime. It’s days like today that should remind us all that we shouldn’t have to compete, judge or tear down those among us and instead we should uplift, empower, encourage and support our fellow females, which is exactly what I’m here to do today. There are so many ladies who have given me little nuggets of life wisdom which have all contributed to the woman that I am today.

My Mum – She always encouraged me to explore my creativity and never put limitations on what I could or couldn’t do. She taught me how to self-motivate & be grateful for the smaller things in life.

My Friends – I have a girl gang that is seriously enviable. My friends are some of the most inspiring people to be around. All with different passions, life mottos and brimming with the best advice you could ever ask for. Every time I hang out with any of them, I leave feeling a little more inspired.

Alfie’s Mum – I’ve known Amanda for almost 5 years and consider her an extension to my family. She is one of the most open minded and open hearted ladies I know and although I would consider myself to be both of those things, since meeting her I have become a lot more compassionate and patient.

HAPPY HOLIDAYS




Whew!!! It's been busy here lately ☺


My niece and nephews have been visiting daily, and we've been going for walks through the town almost everyday. So my days have been very different lately. Ahh... Blame it on the season☺


How is it going for you?


It's quite busy around town, but for the next few days, I will be slowing down, getting back on my regular posting schedule (next week), and chilling at home... I love a quiet, cozy, yummy and homespun holiday season.
